Lemon Pie

Lemon Pie

3 eggs- separated

1 1/4 cup sugar

3 tablespoons flour

pinch of salt

Zest and Juice of 2 Lemons

1 tablespoon melted butter

2 cups scaled milk

1-2 pie shells

Pre-Heat oven to 425*F. Combine egg yolks and sugar mixed well. Add flour and salt mix well. Add lemon Zest and lemon juice butter and scaled milk mix well again. Beat egg whites until stiff and fold into the milk mixture. Pour into un-baked pie shells. Bake for 15 min at 425*F then drop the temperature to 325*F and bake until filling is firm.
